COQUILLES SAINT-JACQUES


We have discovered frozen scallops at the supermarket.
For some reason, they are about €8 for a kilo with the corail but €30 without.  Since the corail is the tastiest part of the scallop it is hard to understand why scallops should be cheaper with it.  Another French mystery.

I made the gratinée in the traditional way with onion, mushroom, butter, white wine and breadcrumbs (chapelureL'expression « n'avoir plus de chapelure sur le jambonneau » signifie n'avoir plus de cheveux, être chauve) but I also put a layer of puréed potato as hommage to Julia Child.
