SODA BREAD
2 cups coarse wholemeal flour
2 cups cream flour
1 teaspoon bread soda
1 teaspoon salt
1 – 2 cups buttermilk
Preheat the oven to 375ºF/200ºC
Sift the dry ingredients together through your fingers. Try to get as much air into the mixture as possible.
Add the buttermilk a little at a time until a sticky dough forms. Use a wooden spoon to mix everything together gently.
Use your hands to form a ball of dough then gently flatten the dough into a round disc.
Place the dough on parchment paper on a cookie sheet.
Place the cookie sheet in the middle of the oven.
Bake for about 40 minutes.
Check for a hollow sound then place the bread on a rack to cool.
